Pecan or Cashew Brittle

Why let peanuts have all the fun? Here's a recipe for a delicious brittle that can utilize cashews, pecans, or any combination for the nuts in your family.

INGREDIENTS
1 cup sugar
1/2 cup light corn syrup
1/8 teaspoon salt
2 cups pecan halves or cashews
1 teaspoon margarine or butter
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 teaspoon baking soda

DIRECTIONS
In greased 2-quart glass measure, cook sugar, corn syrup, and salt on High 2 to 3 minutes until boiling. Cook 4 minutes.

Stir in nuts, butter, vanilla, and cinnamon. Cook 2 minutes.

Immediately, stir in baking soda until light and foamy.

Quickly pour onto greased cookie sheet; spread.

Cool; break into pieces. Makes 1 pound.

CLEAN-UP TIP
After cooking the candy, allow the glass measure to cool to room temperature before cleaning. Do not attempt to chip the hardened brittle off the glass. For easiest clean-up, fill the measure with water, then heat on High 10 minutes. Sugar will soften and wash off quickly.
