Cranberry Walnut Bread
This recipe is great as a Christmas-morning breakfast treat.
INGREDIENTS
4 cups white flour
1 tablespoon baking powder
1 teaspoon baking soda
3/4 teaspoon cinnamon
1-1/3 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup butter (1 stick), melted)
1 tablespoon grated orange rind
1-1/2 cups orange juice
2 eggs
2 cups fresh cranberries, chopped
1 cup dried cranberries, chopped
1 cup walnuts, chopped
DIRECTIONS
Preheat oven to 350 degrees F. Butter and flour two 9x5" pans.
Combine all dry ingredients. In a separate bowl, combine butter, sugar, orange rind, juice, and eggs. Slowly beat in dry
ingredients. Add nuts and cranberries.
Divide butter evenly between two pans. Bake for 55-60 minutes or until fork inserted into the center comes out clean.
Cool in pan for at least ten minutes, then turn out.
